A delicious cheesy dip made with beer, perfect for serving with pretzels and crudité.
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 teaspoon garlic powder
Kosher salt and freshly cracked pepper, (to taste)
½ cup whole milk, (room temperature)
½ bottle lager beer, (room temperature)
12 oz cheddar cheese, (grated)
Splash worcestershire to taste
Splash hot sauce, (to taste)
In a saucepan, heat butter and flour. Cook, stirring with a wooden spoon, for a minute or two. Add garlic powder, salt, and pepper. Slowly add milk, whisking to incorporate. Do the same with the beer. Once the mixture is simmering nicely, remove from the heat.
Add the cheese slowly, just a small handful at a time. Whisk until it melts before adding more. If you need to reheat for a second so the cheese will melt, you can do so. Just don’t let it come to a boil!
Add worcestershire and hot sauce, along with more salt and pepper to taste. Gently reheat before serving. Serve with pretzels, pretzel chips, cauliflower, other crudité… whatever your heart desires! Serves 8 to 10.
Don’t buy pre-shredded cheese for this. It contains stabilizers that will affect the texture. Buy the blocks and use a grater or food processor if you have a shredder attachment.
